If you love meringues even half as much as I do, you will not fail to fall in love with Aux Merveilleux de Fred. This boulangerie/pâtisserie is living proof that simplicity is the ultimate form of sophistication. Domes of meringue are sandwiched together with whipped cream and covered with chocolate shavings or more crumbled meringue. They come in three flavours – coffee, (aka l’inpensable) chocolate (le merveilleux) and speculoos, a crunchy shortbread biscuit known here as â€˜l’incroyable’. It is so refreshing to find a pâtisserie which truly treats meringue as a fine art – soft and chewy on the inside with a crisp exterior and just the right level of sweetness. Divine.

Pâtisseries in Paris are constantly struggling with spatial limitations but Aux Merveilleux de Fred has worked around this by using the shop display window as a work space – this way customers walking past the shop can observe as the meringues are assembled before their very eyes. Thus, it is surely a testament to this superb business idea that there is always a queue outside the shop. Aside from meringues, Aux Merveilleux de Fred offers melt-in-the-mouth viennoiserie, bread and sandwiches. To top off the whole experience, this elegant shop is fit with glimmering chandeliers and costume silhouettes. There are two stores in Paris, in the 16th and 15th as well as three in Lille, one in Saint-Omer and one in Knokke le Zoute, Belgium. In other words, no excuse to miss out!
